Chicken Tortilla Soup

So LOTS and LOTS of you requested this recipe after seeing my picture on fb.

Chicken Tortilla Soup

2 boneless skinless chicken breast

2 cans Rotel – I used the lime and cilantro one

1 can black beans, rinsed and drained

1 can kidney beans, rinsed and drained

1 can corn – I don’t like canned corn so I used about a cup of frozen corn

1 medium onion chopped

2 cans chicken broth

1 1/2 cups water

1 TBS garlic powder

1 TBS chile powder – I used about 3/4 of the TBS and it was spicy enough for my liking

1 TBS cumin

Put chopped onion, cans of beans , Rotel cans, corn, chicken broth, water and spices into corckpot and mix well.  Put chicken breasts in and make sure to submerge under the liquid.  Cook on high 6-7 hours.  Before serving remove the chicken from soup and shred.  Return chicken to crockpot and stir to combine.

To serve put a few tortilla chips in the bottom of a bowl, ladle soup over the chips and top with shredded cheese.
