Banana Bread

So, I looked back and it's been a good month and a half since I last posted a recipe - so much for doing them weekly. Oh well, what can I say.

Banana Bread

1 3/4 c flour
1 1/4 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
2/3 c sugar
1/3 c shortening
2 eggs
2 TBS milk
1 c mashed ripe bananas
1/4 c chopped nuts (optional)

Stir together flour, baking powder, baking soda and salt. Set aside

In a bowl, beat sugar and shortening with electric mixer, scraping sides of bowl as needed. Add eggs, one at a time, and the milk, beating till smooth after each addition. Add flour mixture and banana alternately to creamed mixture, beating till smooth after each addition. Fold in nuts.

Pour batter into a lightly greased 8x4x2 inch loaf pan. Bake in a 350 degree over for 55-60 minutes or until a toothpick inserted near the center comes out clean.
