I commented on one of Catie's Facebook status's about how her Chicken Parmesan she was making for dinner sounded really YUMMY and thought that it would be a great idea to share some recipes. I seem to make the same things over and over again - mainly because we like them, the ingredients fit into our budget (no crazy expensive meals on a teachers salary) and they are pretty simple recipes. I'm asking for all of you that follow my blog to post your own blog with a favorite recipe of yours. I'm going to try and post one recipe a week - we'll see how far I can get with the meals that we make.
So my first post is going to be easy - it's a Rachael Ray recipe called "Yakitori Noodle Bowls" and it was really good. A few changes/additions to the recipe - instead of Sherry, I used Chicken Broth - and we added carrots and red bell peppers in when the chicken was almost finished cooking through - thought that it needed a few more veggies than just scallions. We also omitted the sesame seeds at the end, mainly because we didn't have any on hand.

Awesome idea Jaime! I will definitely try your new recipe out, it sounds yummy! I'll have to post one of my faves as soon as I dig out the recipe card for it! I'm so excited, I love getting new recipes!
Cavatappi with Spinach, Beans, and Asiago Cheese
Ingredients
8c coarsely chopped spinachleaves
4 cups hot cooked cavatappi (about 6 ounces uncooked spiral-shaped pasta)
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 (19-ounce) can cannellini beans or other white beans, drained
2 garlic cloves, crushed
1/2 cup (2 ounces) shredded Asiago cheese
Preparation
Combine all ingredients in a large bowl, and toss well. Sprinkle with fresh ground black pepper, if desired.
This is one of my faves! Soooo super easy and very yummy.
