Swimming comes to an end…

Geez, I realizing  how far behind I am in posting.  So Caty’s swim lessons ended back mid-August, before preschool even started!  OOPS!!  She had a few days in the beginning of the second session that didn’t go so well, but she eventually relaxed and enjoyed them – even going completely underwater.  YAHOO!!

It’s Preschool Time

I just realized that I never posted pictures from Caty’s first day back at preschool.  She started back on August 17th and she was so excited about returning.  All of her friends from last years class returned along with several new friends.  Her class has already been on their first field trip – to The Report Card, which is an educational store, or “the teacher store” as Caty calls it.  The kids were read a story – The Kissing Hand – and got to make a puppet to go along with the book.  Snack was served (she’s not having problems eating snack like she did at the beginning of last school year) and a few songs were sung.  It was a fun place to visit.

Recipe Time

This is one of our favorites around our house.  It’s a recipe that my mom made while we were growing up and it’s now one that we make often.

Chicken Stuffed Rolls

- we make 6 rolls and this is enough for the 3 of us for dinner and some for lunch the next day.  I usually eat 1, maybe 1 1/2, Scott will eat 2 and Caty the other half of mine. 

  • 1 –1.5 lbs boneless skinless chicken depending on size of family (I use about 8 chicken tenderloins for the 3 of us)
  • 3 oz softened cream cheese
  • 3 TBS butter – divided in half: 1.5 TBS softened & 1.5 TBS melted
  • 3 TBS milk
  • 2 packages Crescent Rolls
  • Seasoned bread crumbs for topping

Preheat oven to 350 degrees.

Boil the chicken and when cooked through, shred. 

Combine shredded chicken, softened cream cheese, 1.5 TBS butter and milk. 

To assemble: each package of crescent rolls will make 4 rolls.  Open up package and separate the dough into 4 rectangles (I only showed 2).  You’ll need to press the seam together and spread out the dough to make it a little larger.

Place a heaping 1/4 cup scoop onto each rectangle.

Fold all corners and sides to the center, pressing the dough together slightly so it sticks.

Place on baking sheet and drizzle 1.5 TBS melted butter evenly among the rolls.  Sprinkle bread crumbs over each roll.

Bake for about 20 minutes.

Comparison…

I’m friends with most of you on Facebook so you’ve probably seen this picture that I put together.  For those of you that aren’t, I wanted to show everyone how much the girls look like me.

Some Hanna cuteness!

Hanna is approaching 12 weeks already!!  I thought that I would share a few new pictures and videos.  She’s smiling all the time, okay, well most of the time.  She is sleeping well – a good 6 hour(sometimes longer) stretch at night.  She’s got great head control and back strength; she’s going to be a show off around here.  Caitlyn was on the early side with her milestones, following the Achondroplasia milestone charts.  She held her head up around 4 months, sat with assistance by 10 months, and was walking at 18 months.  I think with Hanna, she will also reach milestones early on.
